So that there are eggs, vegetables and various kinds of sauce and chicken is used in it for protein. But here you can use meat, mushrooms or shrimp as you wish.
Usually it is stirred fried noodles. The vegetables used in this cooking are never overcooked, because vegetables add a different crispy feel which is very good to eat. Indian noodles have a high chilli content, which is why I added green chilli in addition to black pepper in this dish.

Additional tips for Indian chicken chow mein recipe:
Don’t overcook the noodles. because if the noodle is overcooked it becomes sticky and the spices do not mix well. So, you have to boil the noodles carefully.
When you fry the chicken you have to increase the heat of the stove. If you cook on low heat, all the juices inside the chicken will come out and the chicken becomes dry, which is not good to eat.
To prevent the noodles from sticking, the noodles should be washed with cold water immediately after boiling and pour a few drops of oil on the boiled noodles and mix it well to avoid them sticking to each other.
Many types of sauce and lemon juice have been used in this cooking, so sugar has been used to balance the spice and helps to increase the chow Mein taste.
If you do not have lemons, you can use vinegar. Vinegar works like a lemon. But you have to use one of these two. It makes Chow Mein taste better.

If you are a vegetable, you have to exclude fish sauce and chicken from this dish and you can use soybeans in this place or you can cook it using just a variety of vegetables of your choice.

Ingredients
For boiling noodles:
- Noodles 1 packet
- Water for boiling noodles
- Oil 1 tablespoons
- Salt to taste
For marinating chicken:
- Boneless chicken thinly slices 200 gm
- Black pepper ½ tablespoons
- Soy sauce ½ tablespoons
- Oyster sauce ½ tablespoons
- Lemon juices 1 tablespoon
- Corn starch 2 tablespoon
- Salt to taste
For making noodles:
- Oil 1 tablespoons
- Onion 1 medium size sliced
- Green chili 3 or 4 sliced
- Garlic 1 tablespoons chopped.
- Carrots ½ cup julienne cut
- Red capsicum ½ julienne cut
- Green capsicum ½ julienne cut
- Cabbage ½ julienne cut
- Sugar 1 teaspoons
- Black pepper ½ teaspoons
- Salt to taste
- Soy sauce 2 teaspoons
- Fish sauce 1 teaspoons
- Oyster sauce 1 tablespoons
- Spring onion greens 1 teaspoons
- Eggs 2 prices
Instructions
For boiling noodles:
- Take a deep pan and boil water, add salt and oil, add noodles and boil it for 5 to 7 minutes.
- After boiling, rinse the noodles with cool or normal water. For avoiding the stickiness to each other add a few drops of oil and mix with noodles.
For marinating, making chicken and egg:
- Take boneless chicken and thinly slice the chicken pieces into bite size. Now in a mixing bowl add chicken pieces, black pepper, soy sauce, oyster sauce, lemon juices, corn starch salt to taste and mix it well. If you have time then marinated the chicken for 30 minute it enhances the flavor.
- Heat a pan on medium flame add oil, shallow fry the chicken pieces until it’s just cooked.
- Take a pan and heat 1 teaspoon of oil, break the eggs directly in the pan, scramble, add pinch of salt, add black pepper, mix it well and cook the eggs for a minute.
For making noodles:
- Take a pan on high flame, heat the oil, add onion, garlic, chili, sauté it and cook until the onions become golden brown.
- Now add the julienne cut vegetables (red capsicum, green capsicum, Carrots, Cabbage) salt to taste and sauté it on high flame for 3 to 4 minute.
- Then add pre-made chicken and eggs and mix it. Then add sugar, spring greens onion, black pepper, fish sauce, soy sauce, oyster sauce, mix them and sauté it for a minute.
- After sauté it add the boiled noodles and mix it and cook for 2 to 3 minutes. When the noodles blend very well with the vegetables, then you have to turn off the stove, it has to be served hot with your favorite sauce and enjoy the best ever chicken chow mein.
