Ingredients

  1. Mutton 2 kg
  2. Onion sliced 5 medium sizes
  3. Ginger paste 2 tbsp.
  4. Garlic paste 2.5 tbsp.
  5. Green chili 4 to 5 pieces.
  6. Red chili powder 2 tbsp.
  7. Cumin powder 2 tbsp.
  8. Coriander powder 2.5 tbsp.
  9. Turmeric powder 2 tbsp.
  10. Cinnamon 3 medium sticks
  11. Cardamom 5 pieces
  12. Clove 6 pieces
  13. Bay leaves 3
  14. Lemon juice 2 tbsp.
  15. Sugar 2 tsp.
  16. Salt to taste
  17. Oil ½ cup
  18. Hot water as required 

For garnishing:

  1. Garam masala 1.5 tbsp.
  2. Roasted cumin 1.5 tsp.
  3. Crushed fried onion 3 tbsp.

Instructions

  1. In a mixing bowl, add mutton, salt, ginger garlic paste, and lemon juice, mix well and marinate the mutton for at least 30 minutes.
  2.  Set a wok on medium flame, add oil, add cardamom, cloves, cinnamon, bay leaves, sate them for a few seconds, add onion slice and cook until golden brown.
  3. Add marinated mutton and the remaining marinade, mix well and cook on high flame for 10 to 15 minutes.
  4. Low down the flame and cook for 25 minutes. Keep stirring in intervals. 
  5.  Add turmeric powder, cumin powder, coriander powder, and red chili powder, mix well and cook for 15 minutes, keeping the flame on medium heat while stirring in intervals.
  6. Add hot water to cook the mutton for 10 – 15 minutes. Now add green chilies and sugar. Cover and cook 30 – 35 minutes more or until the mutton is tender and soft. Keep stirring in intervals.
  7. Add Garam masala, roasted cumin, crushed fried onion, and mix well. Your 2 kg mutton curry is ready to enjoy.
