- Onion slice ½ cup (3 medium sizes)
- Ginger paste 1 tbsp.
- Garlic paste 1.5 tbsp.
- Green chili 4 to 5 pieces.
- Red chili powder 1 tbsp.
- Cumin powder 1 tbsp.
- Coriander powder 1.5 tbsp.
- Turmeric powder 1 tbsp.
- Cinnamon 2 small sticks
- Cardamom 3 pieces
- Clove 4 pieces
- Bay leaves 2
- Salt to taste
- Oil ½ cup
- Hot water as required
- Garam masala 1 tbsp.
- Roasted cumin 1 tsp.
- Crushed fried onion 2 tbsp.
- Heat oil a wok and add cardamom, cloves, cinnamon, bay leaves. Once it splutters, add sliced onion and stir it on a medium flame for 2-3 minutes until it's golden brown.
- Now add the ginger garlic paste, mix and continue to fry it on a medium flame for 2-3 minutes until the rawness is gone.
- Add the spices powder, give a mix, add 2 tbsp. Water and cook on medium to low flame for 3-4 minutes.
- Now add the mutton pieces, mix them well with the spices and cook on medium-high flame for about 10-12 minutes.
- Low down the flame and cook for 20-25 minutes while stirring in intervals.
- Add hot water to cook the mutton for 5-10 minutes. Now add green chilies, cover, and cook 25-30 minutes more or until the mutton is tender and soft. Keep stirring in intervals.
- Now add garam masala, roasted cumin, crushed fried onion, and mix well. Your mutton curry is ready.
