Ingredients

  1. Mutton 1 kg
  2. Onion slice ½ cup (3 medium sizes)
  3. Ginger paste 1 tbsp.
  4. Garlic paste 1.5 tbsp.
  5. Green chili 4 to 5 pieces.
  6. Red chili powder 1 tbsp.
  7. Cumin powder 1 tbsp.
  8. Coriander powder 1.5 tbsp.
  9. Turmeric powder 1 tbsp.
  10. Cinnamon 2 small sticks
  11. Cardamom 3 pieces
  12. Clove 4 pieces
  13. Bay leaves 2  
  14. Salt to taste
  15. Oil ½ cup
  16. Hot water as required 

For garnishing:

  1. Garam masala 1 tbsp.
  2. Roasted cumin 1 tsp.
  3. Crushed fried onion 2 tbsp.

Instructions

  1. Heat oil a wok and add cardamom, cloves, cinnamon, bay leaves. Once it splutters, add sliced onion and stir it on a medium flame for 2-3 minutes until it's golden brown.
  2. Now add the ginger garlic paste, mix and continue to fry it on a medium flame for 2-3 minutes until the rawness is gone.
  3. Add the spices powder, give a mix, add 2 tbsp. Water and cook on medium to low flame for 3-4 minutes.
  4. Now add the mutton pieces, mix them well with the spices and cook on medium-high flame for about 10-12 minutes.
  5. Low down the flame and cook for 20-25 minutes while stirring in intervals. 
  6. Add hot water to cook the mutton for 5-10 minutes. Now add green chilies, cover, and cook 25-30 minutes more or until the mutton is tender and soft. Keep stirring in intervals.
  7. Now add garam masala, roasted cumin, crushed fried onion, and mix well. Your mutton curry is ready.
